Rosalind’s Healthier Turkey Lasagna

Ingredients
1 lb turkey sausage
1 lb ground turkey
1/2 cup chopped onion
2 cloves of garlic, crushed
1 28-oz can crushed tomato
1 6-oz can tomato sauce
2 tsp dried basil
1 tsp Italian seasoning
1 tsp salt & pepper
12 lasagna noodles
1/4 cup low-fat mozzarella cheese
16 oz low-fat cottage cheese

Directions
1. Preheat oven to 375 degrees. Heat a skillet. Cook the turkey sausage, ground turkey, onions and garlic until well browned. Stir in crushed tomatoes and tomato sauce. Add the basil, Italian seasoning, salt and pepper. Simmer 30 minutes, stirring occasionally.
2. Brina a large pot of lightly salted water to a boil and cook the lasagna noodles, stirring occasionally until cooked but still firm (about 8 minutes). Drain.
3. Spread 1 1/2 cups turkey sauce in the bottom of a 9×13 baking dish. Arrange 6 noodles lengthwise over the sauce. Spread half of the cottage cheese over the noodles. Top with 1/3 of the mozzarella cheese. Repeat layers and top with the remaining mozzarella. Cover with foil. Bake in oven until sauce is bubbling and cheese melted, about 25 minutes. Remove foil and bake until cheese is golden brown. Cool for 15 minutes before serving.

    It was a pleasure to meet Registered Dietitian Rosalind at the Healthy Diva Meet-up group at Black Infant Health.
