Refreshing Watermelon Salsa!
At the meet-up at Imperial Barbershop on March 8th, our food expert Rosalind Bishop prepared a tasty and healthy snack for us-watermelon salsa. While this may sound strange, it’s very refreshing and also helps you get your recommended water intake

Makes 8 servings of 1/2 cup each
Prep time: 15 minutes
Ingredients
3 cups seeded and chopped watermelon
1/2 medium onion, chopped
1/2 red bell pepper, chopped
1 tablespoon chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon vegetable oil
Preparation
1. In a medium bowl, mix all ingredients together
2. Serve immediately or cover and refrigerate for up to 1 hour to let flavors blend
